Joining a cooking contest is one of the farthest thing from my mind specially since my specialties mostly involved leftovers, and the “silog” variety.
But since I blogged about the Grand Samsung Cook off last month, I decided to give it a try, borrowing one of my mom’s recipes, especially since its her cooking’s fault that I’ve decided to forego my dreams of becoming a supermodel.
One of her specialties, which has become a staple during our holiday dinner is her version of Hamonado. Its so good that its either Kare kare or this dish that she’s often asked to bring to our New Year potluck parties.
The of sweet-salty-tangy taste of the tender meat and the pineapple syrup sauce makes it perfect with rice or bread, and it also a hotdog in the middle which makes it a hit among kids (and makes me love it even more!)
Ingredients:
1 kilo pork either kasim or lomo, sliced thinly
1 cup pork fat, sliced thinly
5 pieces hotdog (jumbo or king size)
1 small can pineapple juice or about 300ml
1 cup brown sugar
1 tsp salt
thread
Procedure
1. Combine the sugar, salt and a cup pineapple juice on a large bowl. Rub the pork slices with this mixture thoroughly, making sure that the meat is coated well.
2. On a large plate, arrange the pork slices, pork fat, and place the hotdog in the middle.
3. Form the meat into a roll by tying a thread around them. Just make sure the thread is thick enough to hold the meat and hotdog together)
4. Save any drippings and the pineapple juice from the meat roll.
5. Boil the meat in the pineapple juice mixture for 30-45 minutes in a pressure cooker until meat is tender.
6.Cut the thread tied around the meat roll. Let the meat cool a bit before slicing.
7. Set aside remaining pineapple syrup as sauce.
And here it is!
